[Recipe] Organic Basil Pesto & Zucchini Noodles

Pesto is one of my favorite Italian sauces. I love the strong flavors of the basil, garlic and Parmesan cheese together! Had a craving for something healthy last night, so instead of eating my pesto with pasta I made zucchini "noodles". They are a great way to trick your mind, avoid the carbs and sneak in extra veggies! Lately I've been doing almost all of my food shopping at Trader Joe's . It's close to home (I can walk there), inexpensive and they carry plenty of organic and gourmet items. Everything you see below was purchased at TJ's, minus the pasta noodles (for the boyfriend), Himalayan salts and black pepper. Summer Solstice & Debby Downer

I planned on going home to Tampa Bay, Florida for Summer Solstice to completely relax, bask in the sunshine, go out on the boat and catch up with my friends and family. Great vacation plan, right? Unfortunately, I only got a few hours of sunny pool time at Safety Harbor Resort & Spa before the relentless rain began to pour. Tropical Storm Debby Downer, as I called her, was on her way to visit through Florida the same time I was. Tampa Bay received about a foot of rain with areas flooding, streets blocked off and schools closing. Seriously crazy weather for the first official week of summer. The boat was completely out, so I spent the whole week hanging with friends and visiting with family. Feeding the Blog

Dear blog, I know you must be starving since the last time I fed you was three months ago.  I miss you!  You know how life gets sometimes... days turn into months and before you have time to stop the year is slipping away. Blogging consistently is a lifestyle, so  I'm making a goal to post at least once a week.  After all, I know you're worth it. Now, where to begin on filling you in! I've started using SparkPeople.com  about two weeks ago to track my calories and exercise. Not because I'm obsessing over it, but simply because I wanted to see if I was getting enough protein in my diet. So far it's been fun to check-in and track things, get points, trophies and reports on my daily intake and burn. Who knew how much calories a person could drink on an average weekend?!
