I scored an organic basil plant for $2.00 from the Marietta Square Farmers Market a few weeks back. I've been craving pesto lately and could not wait to make it fresh! My parents used to make pesto all the time and I have the recipe in my head. It goes something like this...

Garden Fresh Pesto Recipe
  • 1/2 cup fresh basil
  • 1/4 cup roasted pine nuts
  • 1/4 parmesan
  • 2 cloves of garlic
  • 2 Tbsp EVOO
  • juice of 1/2 a lemon
  • sea salt and pepper to taste

Put everything into a blender and blend until smooth. I used a Magic Bullet...love that thing! Mix the pesto with pasta, use as a spread on sandwiches, or get creative with it! I mixed mine with whole wheat pasta on a bed of organic spinach with Turkey Parmesan Meatballs. Sooo good!

Now my basil plant just needs to grow like the speed of light so I can eat pesto on the daily... ♥ the stuff.
