This has to be one of the easiest recipes I have ever made. I first saw portobello mushroom "pizzas" at Whole Foods in the prepared food section -- ready to take and bake at home. Genius! Then my friend Kate posted a photo of her meal and I had to try it myself. Looks mouthwatering! Behold, a new juicy take on veggie pizza:

- 2-4 large portabello mushroom caps (1-2 per person depending on how hungry you are!)
- your favorite tomato sauce
- veggies or toppings of choice
- cheese (Cabot's sharp cheddar pictured -- they also have a 50% reduced-fat version that's great too)
Directions
- Preheat over to 400-degrees
- Place mushrooms bottoms up on a cookie/baking sheet
- Spread around 2-3 Tbsp of tomato sauce per mushroom
- Add desired veggies or other toppings, finish off with cheese
- Bake mushrooms for 10-15 minutes (or until cheese is baked to your liking)
