Austin, here I come!

It's just about killed me to keep this secret for this long... I'm moving to Austin, Texas on January 31st!   Yes, that's right.  This Florida native, born and raised in Tampa Bay, is taking a huge leap and road tripping it to Texas to start a new chapter in my life.  New city, new apartment, new career, new everything.  To be honest, it's bitter sweet. I ♥ my life here at T-Tapp.   This decision kinda breaks my heart.   I've been working and training with Teresa Tapp since 1997! That's seriously my entire working career -- almost half of my life here on planet Earth -- and totally worth it.  (I just turned 30 on Monday!)  I literally grew up at T-Tapp and will always be thankful for that.  Teresa Tapp is an amazing woman and mentor.  She is such an inspiration to me.  I have learned SO much from T-Tapp about myself, life, health, fitness and growing a business.  It has been a pleasure working with Teresa and everyone else here in the T-Tapp office -- Ber

{ weekend } Birthday Celebrations!

Happy Birthday to Me! Plus Kristy and Caroline too. We had a super fun surprise filled weekend together... from Winghouse (cheesy) to our VIP bottle service at Bishop's Lounge (classy).  Good times with fabulous peeps! Me & Lolly Pre-party with the girls!  From the left: Me, Lolly, Jo, Kristy, Val & Kelly Bottle service! On Sunday my boyfriend took me to the Chihuly Collection in St. Pete. First, we enjoyed a Blue Moon at The Moon Under Water . Ironic maybe? Then we walked around downtown and ended up at The Garden for a late snacky lunch. Hummus, Pesto & Pita Blue Moon & a side Caesar Short, sweet and delicious. Au revoir!

Tapas Lunch at Ceviche

Yesterday I had a long (and lovely) lunch meeting with Teresa Tapp at the Ceviche (at the old Tio Pepe's location in Clearwater).  The restaurant has a fantastic Spanish ambiance with a friendly and attentive staff!  Now I wish I took some photos of the inside of the restaurant (and our 6'8" waiter!) to share with you. Check out their website for more photos. Here's what we shared... along with some really good wine: ATUN ESTILO TARTARO Sushi-grade tuna hand chopped with capers, onions, fresh parsley and sesame oil. CEVICHE DE SALMON Fresh salmon marinated in lemon, lime, cilantro, sweet onion and topped with caviar. ESPARRAGOS Fresh grilled asparagus with field greens and aioli. The meal was fantastic!   I enjoyed all of it, but especially having Teresa all to myself for a few hours.  It was wonderful to catch up and be able to talk like real friends.  Thanks for another great lunch, Teresa! Hop Tip from the bartender:  Wednesday night they have a

Fried Green Tomatoes at Safety Harbor Grill

Last Friday my dad came by to take me out to lunch. I ♥ those kind of days!  We like to eat local and decided to try out Safety Harbor Grill.  (A few months ago I enjoyed brunch there with some friends.)  We ordered their Fried Green Tomatoes to share because I've never had them... until now! They're pretty tasty!  Just wish that SHG would make their own dressing.  Bottled ranch and blue cheese just don't taste good. Bleh. I ordered the Cobb Salad (spring mix, chicken breast, avocado, eggs, tomato, crumbled blue cheese).  It was OK. Not impressed and would not recommend it.  The chicken was way overcooked and underlying lettuce was wilted, but the avocado was good (and that's why I really ordered it in the first place). I will try something else on the menu next time... if there is one.  My dad was pleased with his grouper sandwich though! Au revoir!

Green Smoothie Challenge, Day 7: Kale Banana OJ

Oh, the joys of a daily challenge...  I think that I skipped a smoothie on January 8th (Day 6) and apparently I've forgotten to snap a photo of my smoothie yesterday (Day 8), but it was the same as this one!  Here's my smoothie January 9th: Ingredients: 2 cups chopped kale 1 frozen banana 1/2 cup Original Almond Breeze 1/2 cup Orange/Tangerine juice Florida bee pollen Au revoir! Green Smoothie Challenge, Day 5: Kale Banana Barleans

Bonjour!   Sorry about missing a few days of Green Smoothie Challenge posts.  My life has been a little crazy this past week -- lots going on.  Updates soon!  Here's my smoothie January 7th: Ingredients: 2 cups chopped kale 1 frozen banana 1 cup Original Almond Breeze 1 Tbsp Barlean's Omega Swirl (makes it taste like a dessert!) Green Smoothie Challenge, Day 4: Kale Banana Yogurt

Another delicious green smoothie this morning!  Have you tried them yet?  SO quick and easy to make, and green smoothies are super nourishing.  This morning's breakfast was especially great tasting... my body is starting to crave green smoothies again.  The little bit of Greek yogurt helps to keep me satisfied until lunch.  (And if it doesn't I have raw walnuts and an organic apple to tide me over.) I'm also aiming to eat a big salad or have a bowl of soup for lunch daily.  So far so good! Ingredients: 2 cups chopped kale 1 frozen banana 1 cup Original Almond Breeze 1 Tbsp FAGE 2% Plain Yogurt Au revoir! Did you miss the first post? 2011 World Wide Green Smoothie Challenge

Green Smoothie Challenge, Day 3: Kale Blueberry Banana

Blueberries made my smoothie look like mud!  Don't worry, it didn't taste like mud.  Did you know that blueberries have the highest antioxidant capacity of all fresh fruit? They also help to neutralize free radicals and combat aging.  That's a plus!  Blueberries have many other health benefits, and I highly recommend adding them to your daily diet!   Ingredients: 2 cups chopped kale 1/2 frozen banana 1/2 cup frozen blueberries 1 cup Original Almond Breeze 1 Tbsp FAGE 2% Plain Yogurt Au revoir! Green Smoothie Challenge, Day 2: Kale Banana Cinnamon Coffee

This is yesterday's post. Whoops!  I made a green smoothie with coffee in it.  Yes, trying to combine two things in one and it was somewhat successful.  Interesting flavor combination!  And had a fried egg with cheese on a croissant half. Ingredients: 2 cups chopped kale 1 frozen banana 1/2 cup Original Almond Breeze 1/2 cup Organic Vanilla Coffee Cinnamon to taste Au revoir! Green Smoothie Challenge, Day 1: Kale Banana Orange

My goal is to drink at least one 16-32 ounce green smoothie every day this month. I got off track over vacation and really missed how great these green drinks make me feel. Yesterday I bought two big bags of kale on sale and decided to put that and my frozen bananas to work for me this morning. Ingredients: 2 cups chopped kale 1 frozen banana 1/2 cup Original Almond Breeze 1/2 cup Tangerine-Orange Juice YUMMY! Au revoir! Did you miss the first post? 2011 World Wide Green Smoothie Challenge

2011 World Wide Green Smoothie Challenge

You may be asking, "A green smoothie?"  My answer is " YES! And they are fantastical."  Starting on January 3, 2011 (or sooner if you'd like) you can join people from around the globe in a life changing cleansing adventure to kick-start your New Year and your journey towards optimal health! Here are a few of my tips to help you prepare for the Challenge. Buy a good blender. I dream of someday owning a Vitamix or Blendtec, but the reality is that you don't need a fancy $400 blender to make a green smoothie.  I use a $30 Oster and blend for a bit longer on a high speed to make sure the consistency is super smooth. Stock up on organic produce. Check out your local farmer's market or health food store to pick out a few kinds of organic greens (kale, spinach, romaine, etc) and other produce for your green smoothies. It's a good idea to switch up your greens every few days. Stay armed with produce! Aim for one 16-ounce green smoothie daily. Green smo

My First White Christmas

Yes, that's right... my dream of having a white Christmas came true this year and I could not be happier!  I'm a Florida native who has rarely gone north during the winter.  This year my boyfriend's sister invited us up to Marietta, Georgia to celebrate the holiday together.  We arrived on Christmas Eve just after midnight.  It was cold, but not snowing yet... A Christmas tree of lights as we passed it on the highway. ATLANTA!!! On Christmas Eve Day we did some last minute shopping and errand running.  It was VERY busy out there!  Before dinner we warmed up by the fire while enjoying a glass of sweet Riesling. MERRY CHRISTMAS!!! Once the presents were opened we noticed that it started snowing!!!  I was jumping
